Caramel Apple Cheesecake Brownies

Today is my husband’s 30th birthday! Let’s all give a big Happy Birthday to Emanuel! HAPPY BIRTHDAY! With all the attention surrounding the pregnancy and the upcoming birth of our daughter (3 1/2 weeks to go!), he definitely deserves some love and attention. He has been the most supporting and loving partner these past 9 months and I am so proud to celebrate his life today!

I have spoken many times about how wonderful he is when our anniversary came around and how much of a rock he is for me on his last birthday. So, as much as I would like to go on about my love for this man, I will let you in on a different fact about him. My husband is the most indecisive man ever when it comes to certain things.

“‘What do you want for dinner?”,” Which dress do you like better on me?”,” Where should we hang this photo?” Questions like these are always answered by a blank stare and the empty answer of ”I don’t know, I hate when you ask me these these things.” And, even though I know this answer is always coming, I still ask. It was no different when I asked him what kind of dessert he wanted for his big 30th birthday. ”I don’t know.”  The anticipated dreaded answer. I followed up by asking what his most favorite dessert was. To my surprise the blank stare and usual answer was not what came out of his mouth. ”I like brownies or cheesecake. Oh and apple pie.” Wow. Three answers. Maybe at 30 years old he will finally be able to help me decide what to cook for dinner!

What most people would think of as a list to choose from, I took as a challenge. I was going to combine his three favorite desserts into one incredible culinary experience. I set out to make a delicious 3 layer brownie cheesecake pie thingy. A fudgey brownie base a fluffy cheesecake middle and topped with homemade apple pie filling, a crumb topping and then finished off with a caramel drizzle. Leave it to the mind of a 9 month pregnant woman, who left to her own devices, to come up with this creation. You can thank me (and my ridiculous appetite and cravings) later.

Though it took me a good 3 1/2 hours to make (Im 9 months pregnant and about to pop at any minute! I had to take breaks in between steps and sit down with a glass of water-it wont take you that long), this dessert was worth every minute on my swollen feet. Delicious, decadent and a combination of 3 amazing desserts, it was the most perfect way to say ‘Happy Birthday’ to my husband.

 

Caramel Apple Cheesecake Brownies

A combination of three dessert favorites; apple pie, brownies and cheesecake. This is one decadent dessert sure to satisfy any sweet craving.
Ingredients
  • For Brownies:
  • 6 tablespoons butter
  • 6 ounces dark chocolate chips
  • 1/3 cup cocoa powder
  • 3 eggs
  • 1 cup sugar
  • 1 1/4 teaspoon vanilla
  • 1 cup flour
  • For Cheesecake:
  • 16 ounces cream cheese
  • 3 eggs
  • 1 cup sugar
  • 1 teaspoon vanilla
  • For Apple Pie Filling:
  • 5 apples, peeled, cored and cut into cubes
  • 3/4 cups sugar
  • 1 1/4 teaspoons cinnamon
  • 1/4 teaspoon nutmeg
  • For Crumb Topping:
  • 1 cup flour
  • 3/4 cup brown sugar
  • 6 tablespoons chilled butter, cut into cubes
  • For Caramel Sauce:
  • 1/2 cup cream
  • 1 cup sugar
  • 6 tablespoons butter
Instructions
  1. To make brownies, reheat oven to 350F and grease a large baking dish.
  2. In a double broiler melt chocolate chips and butter over medium heat.
  3. Remove from heat and transfer to a large mixing bowl adding cocoa powder and 3 eggs, one at a time, beating after each addition.
  4. Add sugar and vanilla and stir until combined then add the flour and mix until well until combined. Spread into baking dish and set aside.
  5. Next make the cheesecake by combining together cream cheese, sugar, vanilla and eggs in a large mixing bowl and beat together until creamy.
  6. Pour cheesecake mixture on top of brownie mixture and bake for about 30 minutes, or until cheesecake topping is almost set but still wobbly.
  7. While the cheesecake and brownie layers cook, prepare the apple and crumb topping.
  8. In a mixing bowl combine diced apples, sugar, cinnamon and nutmeg. Toss to coat and set aside.
  9. In a small mixing bowl combine the dry ingredients for the crumb topping flour and brown sugar.
  10. Cut chilled butter into the dry ingredients until mixture resembles wet sand. Set aside.
  11. Next make caramel sauce. In a pot heat sugar over medium heat until sugar turns to liquid and turns a light brown color.
  12. Remove from heat and add butter and cream to sugar and stir until combined and butter is melted. Set aside.
  13. When the cheesecake and brownie layers are almost cooked remove from over and carefully top the cheesecake layer with the apple mixture.
  14. Pour half of the caramel sauce on top of apple mixture (reserving the rest) and top the whole thing with the crumb topping.
  15. Place baking dish back in the oven and cook until crumb topping is cooked and cheesecake is set, about 20-25 minutes.
  16. Let chill completely before slicing.
  17. Top with remaining caramel sauce before serving.

    Beth, what a fantastic “triple treat” – I love the idea of combining these three wonderful desserts into one and i adore the “layered look” with the dripping caramel on top! It all looks so decadent and I am sure that yóur husband totally adored his birthday dessert! Great pictures too – easy to imagine that this was one delicious dessert!
